Another world-famous variety is cultivated on Mount Parnassus and gives rich and rich wines. The great attention given to the vineyard from the pruning to the harvest plays an important role in the creation of quality wines. The vinification scheme is the classic one for red varieties accompanied by twelve months of aging in French oak barrels.

After harvesting the grapes we follow careful destemming with absence of crushing then the juice is driven to the fermentation tank. In the middle of the fermentation the 50% of the grape juice is transferred to a separate tank and fermenting at high temperatures and the remaining 50% fermenting separately at lower temperatures of 20-22°C in order to restrain the maximum aromatic potential diversity. After the end of the fermentation is followed malolactic fermentation in stainless steel tanks and the end of that is maturing in French oak barrels of 225 liters.
Central Greece. The grapes for the production of Merlot from the owned vineyard area, Koufeika of total area of 3 hectares at an altitude of 400-450.
